Preparation:

• Preheat oven to 180°C (160°C fan oven).
• Add the mix, eggs and water to a bowl. Make sure all ingredients are at room temperature.
• Mix on high speed for 7–8 minutes until light and airy.
• Mix for another 2–3 minutes on low speed.
• Pour batter into a greased baking tin and fill halfway to two-thirds full.
• Bake until the sponge feels springy to the touch.
• Remove from the tin immediately after baking and allow to cool on a cooling rack.

🍰 For a 20 cm sponge cake tin, use approximately 250 g of mix. With 500 g of mix, you can create a chocolate sponge layer of approximately 24 cm diameter.
