They are ideal for products that have a light to medium consistency as they dissolve easily in liquids and allow for even color distribution. Water-based gel colors / paste colors are also popular because they are tasteless and do not cause any texture changes.
The water-based food colors are perfect for rolling fondant, marzipan, cake dough, cookies, macarons, royal icing, meringues & Easter eggs. These colors are NOT suitable for chocolate, very fatty foods (cream, mascarpone)
