Preparation for 20–24 Cupcakes:

• 500g baking mix
• 250g soft butter
• 5 eggs (approx. 250g)

Mix all ingredients for approximately 4 minutes on low speed. Fill cupcake cases halfway and bake at 180°C conventional oven or 160°C fan oven for 18–20 minutes.

For Mini Cupcakes:
Bake for approximately 12–15 minutes. Makes around 40–48 mini cupcakes.
